Method

  1. Preheat your air fryer to 160°C (320°F) or your oven to 180°C (350°F).

  2. Peel the banana and mash it thoroughly with a fork in a mixing bowl until smooth.

  3. Add the egg, Skyr, rolled oats, baking powder, cinnamon, sweetener (if using), and vanilla extract. Stir until all the ingredients are fully combined into a thick batter.

  4. Transfer the mixture to a lightly greased 14–16 cm (5½–6-inch) oven-safe baking dish or ramekin, smoothing the top with a spoon.

  5. Air Fryer: Bake for 12–15 minutes until the oatmeal is golden and set in the center.

  6. Oven: Bake for 18–20 minutes until lightly browned and cooked through.

  7. Warm the peanut butter for 10–15 seconds in the microwave or stir it with 1–2 teaspoons of warm water until smooth and pourable.

  8. Drizzle the peanut butter generously over the warm baked oatmeal.

  9. Finish with fresh banana slices, berries, or chopped peanuts if desired, and serve warm.

Chef's Tip

Using a very ripe banana naturally sweetens the oatmeal and creates a moist, cake-like texture. This recipe is delicious served fresh from the oven or chilled overnight and reheated the next morning. For an extra protein boost, enjoy it with an additional spoonful of Skyr on top.
