Greek Lemon, Cod & Orzo Seafood Soup

Method
Sauté Aromatics: Heat the olive oil in a large stockpot over medium heat; add the diced shallot and garlic, cooking gently for 2–3 minutes until softened but unbrowned.
Simmer Orzo: Pour in the fish stock and bring to a gentle boil, then stir in the wholemeal orzo and simmer uncovered for 7 minutes until almost al dente.
Poach Cod: Lower the heat to a gentle simmer, slide in the cod chunks, and poach delicately for 4–5 minutes until the fish turns opaque and flakes easily.
Finish & Season: Remove from heat, stir in the fresh lemon zest, lemon juice, and chopped dill, then season lightly with salt and pepper before serving warm.
