Method

  1. Combine the strawberries and water in a small saucepan. Bring to a gentle boil over medium heat, then remove from the heat.

  2. Immediately stir in the gelatin until it has completely dissolved.

  3. Add the Skyr (or Greek yogurt) and the sweetener.

  4. Using an immersion blender or countertop blender, blend the mixture until completely smooth, light, and creamy.

  5. Pour the mixture into a silicone mold or a parchment-lined dish, smoothing the surface with a spatula.

  6. Refrigerate for 3–4 hours, or until completely firm.

  7. Cut into bite-sized squares or unmold the dessert and serve chilled. Garnish with fresh strawberries or mint leaves if desired.
