Method

  1. Prepare the mixture: Preheat the oven to 180°C. In a large bowl, combine the oats, mashed banana, almond butter, maple syrup and soy milk.

  2. Add the flavour: Stir in the diced pear, walnuts, chia seeds, cinnamon, ginger, vanilla, baking powder and salt. Mix until evenly combined.

  3. Shape the cups: Lightly grease an 8-hole muffin tin. Divide the mixture between the wells and press firmly against the base and sides to create small cups.

  4. Bake: Bake for 22–25 minutes until golden and firm around the edges. Allow to cool in the tin for 5 minutes before carefully removing.

  5. Finish: Fill each cup with a spoonful of Greek yogurt. Top with a few diced pear pieces, pumpkin seeds, chopped walnuts and a light dusting of cinnamon.

Chef's Tip

Vegan option: Replace the Greek yogurt with thick unsweetened soy yogurt. The oat cups themselves are naturally vegan. These little oat cups combine the comforting flavours of pear, cinnamon and toasted walnuts with a surprisingly elegant presentation. The baked oat shell becomes crisp around the edges while staying soft inside, and a spoonful of creamy yogurt turns them into a beautiful individual dessert.
