Method

  1. Mix the base: Combine the oats, chia seeds, cinnamon and salt in a bowl. Add the soy milk, Greek yogurt, almond butter, maple syrup and vanilla.

  2. Add the raspberries: Gently mash half of the raspberries with a fork and swirl them through the oat mixture. Fold in the remaining whole raspberries.

  3. Chill: Divide between two jars or containers. Cover and refrigerate for at least 6 hours, preferably overnight, until thick and creamy.

  4. Adjust: In the morning, stir well. Add a splash of soy milk if the oats have become too thick.

  5. Finish: Top with fresh raspberries, sliced almonds, pumpkin seeds and lemon zest. Serve chilled or allow to stand for a few minutes before eating.

Chef's Tip

Vegan option: Replace the Greek yogurt with 150 g thick unsweetened soy yogurt. All other ingredients are naturally vegan. These overnight oats combine the classic pairing of raspberry and almond with creamy yogurt and chia seeds. The mashed raspberries create beautiful natural swirls throughout the oats, while almonds and pumpkin seeds add satisfying crunch and healthy fats.
