Method

  1. Cook the apple: Place the diced apple in a small skillet over medium heat with the lemon juice, cinnamon, ginger and half the maple syrup. Cook for 5–6 minutes, stirring occasionally, until softened and lightly caramelized.

  2. Toast the oats and walnuts: Add the rolled oats and walnuts to the skillet during the final 2 minutes. Stir frequently until lightly golden and fragrant.

  3. Make the protein base: In a bowl, whisk together the cottage cheese, Greek yogurt, vanilla, chia seeds and remaining maple syrup until creamy.

  4. Assemble: Divide the cottage cheese mixture between two bowls. Spoon the warm cinnamon apple mixture over the top.

  5. Finish: Drizzle with almond butter and sprinkle with the toasted oat-walnut mixture, pumpkin seeds and lemon zest. Serve immediately.
