Method

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

  2. Grate the zucchini using the coarse side of a box grater. If it releases a lot of moisture, wrap it in a clean kitchen towel and squeeze out as much liquid as possible. This step helps the patties hold their shape and develop a crisp exterior.

  3. In a large mixing bowl, combine the grated zucchini, cottage cheese, rolled oats, almond flour, egg, shredded cheese, garlic powder, onion powder, Italian herbs, salt, and black pepper. Stir until a thick, evenly combined mixture forms.

  4. Let the mixture rest for 5 minutes so the oats can absorb some of the moisture.

  5. Divide the mixture into 8 equal portions and shape each into a small patty. Arrange them on the prepared baking tray, leaving a little space between each one.

  6. Bake for 25–30 minutes, flipping the patties halfway through, until they are firm and golden brown on both sides.

  7. Allow the patties to cool for a few minutes before serving. Enjoy them warm with Greek yogurt, a fresh salad, or your favorite healthy dipping sauce.
