Method

  1. Heat a nonstick skillet over medium-high heat. Add the lean ground beef and cook for 5–6 minutes, breaking it into small crumbles as it browns. Season lightly with salt and black pepper, then remove from the heat.

  2. While the beef is cooking, chop the iceberg lettuce into bite-sized pieces and place it in a large serving bowl.

  3. Add the diced tomato, chopped dill pickles, and reduced-fat shredded cheese to the lettuce.

  4. If making the homemade burger sauce, whisk together the Greek yogurt, wholegrain mustard, ketchup, and light mayonnaise until smooth. Alternatively, use your favorite light burger sauce.

  5. Add the warm cooked beef to the salad and drizzle the burger sauce evenly over the top.

  6. Toss gently until all the ingredients are coated with the dressing.

  7. If desired, sprinkle with crispy fried onions just before serving for extra crunch and classic burger flavor. Serve immediately while the beef is still warm.
