High-Protein Chicken Gyros Salad

Method
Preheat an air fryer to 190°C (375°F) or an oven to 180°C (350°F).
Dice the cooked potatoes into small cubes and spread them in a single layer in the air fryer basket or on a baking tray. Cook for 20 minutes in the air fryer (or 30 minutes in the oven), stirring every 5 minutes, until lightly golden and crispy.
If the chicken breast is not already cooked, season it lightly with gyros seasoning and cook it in a skillet or air fryer at 160°C (320°F) for 15 minutes, or until fully cooked. Dice into bite-sized pieces.
In a small bowl, whisk together the Greek yogurt, gyros seasoning, garlic powder, dried oregano, and black pepper until smooth and well combined.
In a large serving bowl, combine the crispy potatoes, chicken, red onion, bell pepper, and cucumber.
Pour the yogurt dressing over the salad and gently toss until all the ingredients are evenly coated.
Serve immediately while the potatoes are still warm for the best contrast of textures and flavors.
For even more authentic gyros flavor, marinate the chicken with the seasoning for 30 minutes before cooking. Fresh dill, parsley, or a squeeze of lemon juice added just before serving will brighten the dish beautifully. This salad is excellent for meal prep—simply store the dressing separately and combine just before eating to keep the vegetables crisp.
