High-Protein Georgian Beef Salad

Method
Place the lean beef in a saucepan, cover with water, and simmer gently for 25–30 minutes, or until tender. Allow it to cool slightly, then slice it into thin strips or bite-sized pieces.
Cut the tomatoes into wedges, slice the bell pepper into thin strips, and thinly slice the red onion.
Drain and rinse the kidney beans thoroughly under cold water, then pat them dry.
Roughly chop the fresh cilantro and finely chop the walnuts.
In a large serving bowl, combine the cooked beef, tomatoes, bell pepper, red onion, kidney beans, and cilantro.
Season generously with salt and freshly ground black pepper, then gently toss until all the ingredients are evenly mixed.
Sprinkle the chopped walnuts over the top just before serving for a delicate crunch and authentic Georgian flavor.
For an even more authentic Georgian-inspired flavor, add a teaspoon of khmeli suneli (Georgian spice blend) and a splash of red wine vinegar or fresh lemon juice before serving. If preparing the salad ahead of time, add the walnuts just before serving so they stay crisp.
