Method

  1. Preheat the oven to 350°F (180°C) and line a large baking tray with parchment paper.

  2. Thoroughly drain the canned corn and pat it dry with paper towels to remove excess moisture.

  3. Divide the corn into 4 equal portions and gently press each portion into a flat, round circle about 5–6 inches (13–15 cm) in diameter on the prepared baking tray.

  4. Evenly sprinkle the reduced-fat shredded cheese over each corn round, making sure the cheese completely covers the surface. The melted cheese acts as the binder that holds the shells together.

  5. Bake for 15 minutes, or until the cheese is melted and lightly golden around the edges.

  6. Remove the tray from the oven and allow the taco shells to cool for 10–15 minutes. This resting time is essential for them to firm up and hold their shape.

  7. Carefully lift the shells and fill them with your favorite high-protein ingredients, such as light cream cheese, lean ham, crisp lettuce, tomatoes, or grilled chicken. Serve immediately.

The drier the corn, the crispier and sturdier your taco shells will be. After baking, you can gently drape the warm shells over the handle of a wooden spoon or a rolling pin while they cool to create a classic taco shape. Experiment with different fillings to keep this recipe fresh and versatile.
