High-Protein Garlic Quesadilla Bake

Method
Preheat the oven or air fryer to 350°F (180°C).
In a medium bowl, combine the Skyr, lemon juice, minced garlic, chopped herbs, and black pepper. Mix until smooth and creamy.
Place one tortilla on a parchment-lined baking tray and spread one-third of the garlic mixture evenly over the surface. Sprinkle with one-third of the shredded cheese.
Top with the second tortilla and repeat the layers of garlic spread and cheese. Finish with the third tortilla.
Spread the remaining garlic mixture over the top tortilla and sprinkle with the remaining shredded cheese to create a golden, cheesy crust.
Bake for 10–15 minutes, or until the cheese is melted, bubbling, and lightly golden.
Let the quesadilla rest for 2–3 minutes, then slice into 4 wedges and serve warm with a fresh salad, salsa, or Greek yogurt dip.
For even more flavor, stir a pinch of smoked paprika or Italian seasoning into the Skyr mixture before assembling. If you'd like to boost the protein further, add thin slices of grilled chicken breast or lean turkey between the tortilla layers without significantly changing the cooking time.
