High-Protein Spinach & Feta Rice Paper Pies

Method
Preheat the oven to 340°F (170°C) and line a baking tray with parchment paper.
In a large bowl, combine the chopped spinach, crumbled light feta, shredded reduced-fat cheese, black pepper, garlic powder, and oregano. Mix until evenly combined. No additional salt is needed because the feta provides enough seasoning.
In a shallow dish, whisk together the egg, water, and soy sauce.
Dip one rice paper wrapper into the egg mixture for about 20 seconds, until softened. If using two wrappers per pie for extra strength, soften both wrappers and stack them together.
Spoon one-quarter of the spinach mixture into the center, then fold the sides over the filling to create a neat parcel.
Place the pies seam-side down on the prepared baking tray and repeat with the remaining ingredients.
Bake for 25–30 minutes, or until the rice paper is crisp and golden. Let the pies cool for 5 minutes before serving.
Using two rice paper wrappers creates a sturdier pie with a satisfyingly crisp exterior, while a single wrapper reduces the carbohydrate content and produces a lighter, more delicate texture. For extra flavor, add a pinch of red pepper flakes or fresh dill to the filling before baking.
