Method

  1. Preheat the oven to 350°F (180°C) and line a large baking tray with parchment paper.

  2. In a large mixing bowl, combine the rolled oats, cottage cheese, shredded reduced-fat cheese, and egg.

  3. Add the garlic powder, Italian seasoning (or pizza seasoning), chicken seasoning if using, and black pepper. Stir until the mixture is evenly combined.

  4. Let the mixture rest for 5 minutes so the oats can absorb some of the moisture, making it easier to shape.

  5. Divide the mixture into 6 equal portions and shape each into a flat round about ½ inch (1–1.5 cm) thick. Arrange them on the prepared baking tray.

  6. Bake for 20–25 minutes, or until the flatbreads are golden around the edges and firm to the touch.

  7. Allow them to cool for 5 minutes before serving. Enjoy warm on their own or pair with Greek yogurt, marinara sauce, or a fresh salad.

For a smoother texture, pulse the rolled oats in a food processor to make oat flour before mixing the batter. This creates softer, more uniform flatbreads while maintaining the same nutritional value. A sprinkle of fresh chives or parsley after baking adds color and freshness.
