Method

  1. Fill a steamer or a saucepan fitted with a steaming rack with enough water to steam the fish. Bring the water to a simmer over a medium heat.

  2. Season the salmon fillets with salt and freshly ground black pepper.

  3. Drizzle each fillet with a little extra virgin olive oil for moisture and then rub the grated ginger and minced garlic evenly across the top of each fillet.

  4. Place the seasoned salmon fillets in the steamer basket or on the steaming rack.

  5. Cover the steamer with a lid and steam the salmon for 15–20 minutes, depending on the thickness of the fillets, until the salmon is opaque and flakes easily with a fork.

  6. While the salmon is steaming, steam or sauté the pak choi in a separate frying pan with a little extra virgin olive oil, salt, and freshly ground black pepper for 3–5 minutes, until tender but still crisp.

  7. Once the salmon is done, carefully remove it from the steamer and place on a serving plate.

  8. Garnish with the chopped spring onions and serve with the steamed pak choi on the side for a complete, healthy meal.
