Grilled Mackerel with Lemon and Fresh Herbs

Method
In a small bowl, mix the extra virgin olive oil, lemon juice, chopped parsley, dill, salt, and freshly ground black pepper.
Coat the mackerel fillets with this marinade, ensuring they are evenly covered. Let the fillets marinate for at least 10 minutes to absorb the flavours.
Preheat the grill to a medium-high heat. Lightly oil the grill rack to prevent sticking.
Place the marinated mackerel fillets skin-side down on the grill and cook for 4–5 minutes per side. The mackerel should have grill marks, and the flesh should flake easily with a fork when done.
While the mackerel is grilling, roast the cubed sweet potatoes in the oven at 200°C (180°C fan/Gas Mark 6) for about 20–25 minutes, tossing halfway through. Drizzle with extra virgin olive oil and season with salt and freshly ground black pepper for a crispy, caramelised side.
Serve the grilled mackerel fillets with the roasted sweet potatoes. For added freshness, sprinkle extra herbs on top and drizzle with additional lemon juice if desired.
