Tomato Basil Soup

Method
Sauté Base Ingredients: Heat 1 tbsp extra virgin olive oil in a large saucepan over a medium heat. Add the diced onion and minced garlic, cooking for 3–4 minutes until the onion is soft and translucent, stirring frequently.
Simmer Tomatoes: Add the 800 g tin of crushed tomatoes and the vegetable stock. Bring the mixture to the boil over a high heat, then reduce the heat to low and simmer gently for 20 minutes to enhance the flavours.
Finish with Seasoning and Herbs: Stir in the balsamic vinegar and the freshly chopped basil after simmering. Adjust the seasoning with salt and freshly ground black pepper to taste.
Serve: Ladle into bowls, garnishing with additional fresh basil if desired. Pair with crusty bread or a light salad for a complete meal.
