High-Protein Cottage Cheese Skillet Flatbread

Method
In a medium bowl, combine the quark (or Skyr), egg, spelt flour, baking powder, grated cheese, garlic, herbs, and a pinch of salt.
Mix thoroughly until a thick, smooth batter forms. If the mixture feels too wet, add a teaspoon of flour; if it's too thick, stir in a teaspoon of water or milk.
Heat a large non-stick skillet over medium-low heat. Lightly grease it with cooking spray if necessary.
Spread the batter into a round flatbread about 18–20 cm (7–8 inches) in diameter, smoothing the surface with the back of a spoon.
Cover the skillet with a lid and cook for 4–5 minutes, until the bottom is golden brown and the top is mostly set.
Carefully flip the flatbread using a large spatula and cook for another 2–3 minutes, uncovered, until both sides are golden and the center is fully cooked.
Slice into wedges and serve warm, either on its own or topped with your favorite high-protein ingredients.
This versatile flatbread can be enjoyed sweet or savory. For a Mediterranean-inspired meal, top it with smoked salmon, cottage cheese, cucumber, and fresh dill. It also works wonderfully as a protein-rich sandwich bread, pizza base, or wrap alternative.
