High-Protein Savory Ham & Cheese Waffles

Method
Preheat the waffle iron and lightly coat it with cooking spray.
In a medium bowl, whisk together the eggs, Skyr, spelt flour, baking powder, garlic powder, smoked paprika, salt, and black pepper until smooth.
Fold in the grated reduced-fat cheese and diced lean ham, mixing until evenly distributed throughout the batter.
Let the batter rest for 2–3 minutes to allow the flour to hydrate, resulting in lighter waffles.
Spoon the batter into the preheated waffle iron, spreading it evenly without overfilling.
Close the waffle iron and cook for 5–7 minutes, or until the waffles are golden brown, crisp on the outside, and fully cooked inside.
Carefully remove the waffles and let them rest for 1 minute to become even crispier.
If you don't have a waffle iron, cook the batter in a lightly greased non-stick skillet as small savory pancakes, cooking for 3–4 minutes per side until golden and cooked through.
Serve warm with fresh vegetables, cottage cheese, or a dollop of Greek yogurt.
