Method

  1. Prepare the scallops: Remove the side muscle from each scallop, if attached. Season lightly with salt and pepper.

  2. Sear the scallops: Heat olive oil in a skillet over medium-high heat. Place scallops in the skillet, ensuring they are not touching. Sear for 2-3 minutes per side until golden brown and caramelized. Remove from the skillet and set aside.
