5-Minute High-Protein Cheesecake Bowl

Method
In a microwave-safe bowl, combine the soft cottage cheese, egg, pudding powder (or cornstarch), and sweetener.
Whisk thoroughly until the mixture is completely smooth and creamy, with no visible lumps.
If using berries, gently fold a handful into the batter or reserve them for serving.
Microwave on 450 watts for 5–6 minutes, or until the center is just set but still slightly soft.
Let the cheesecake rest for 2–3 minutes before serving, as it will continue to firm up while cooling.
Top with fresh berries or an extra spoonful of Skyr if desired.
Serve warm for a soft, custard-like texture or chill for 1–2 hours for a firmer, classic cheesecake consistency.
For an even richer cheesecake flavor, add ½ teaspoon of vanilla extract and a little grated lemon zest before cooking. If you're using cornstarch instead of pudding powder, a pinch of cinnamon or vanilla enhances the sweetness without adding sugar.
