Apple Cinnamon Cottage Cheese Chia Bowl

Method
Soften the apple: Add the diced apple, cinnamon, ginger and water to a small saucepan. Cook over medium-low heat for 3–4 minutes, stirring occasionally, until the apple is tender but still slightly firm. Remove from the heat and let cool for a minute.
Prepare the bowl: Add the cottage cheese, chia seeds, oats and vanilla to a bowl. Stir well and let stand for 2–3 minutes so the chia seeds begin to thicken the mixture.
Add the toppings: Spoon the warm cinnamon apple over the cottage cheese mixture. Sprinkle with chopped walnuts and drizzle with almond butter.
Finish: Add a light drizzle of maple syrup if desired and finish with an extra pinch of cinnamon. Serve immediately while the apples are still warm.
Vegan option: Replace the cottage cheese with 200 g unsweetened high-protein soy yogurt or 200 g silken tofu blended until smooth. Use maple syrup rather than honey if additional sweetness is desired. Warm cinnamon apples meet creamy cottage cheese, chia seeds, walnuts and almond butter in this comforting high-protein breakfast. It has the flavour of apple pie but delivers considerably more protein and fibre, making it satisfying without feeling heavy.
