Method

  1. Prepare the apples: Preheat the oven to 190°C. Place the diced apples in a small baking dish and toss with the lemon juice, lemon zest, cinnamon, ginger and vanilla.

  2. Make the crumble: In a bowl, combine the oats, walnuts, almond flour, pumpkin seeds and sea salt. Add the maple syrup and tahini and mix until a crumbly mixture forms.

  3. Assemble: Scatter the crumble evenly over the apples, covering the surface without pressing it down.

  4. Bake: Bake for 25–30 minutes until the apples are tender and bubbling and the topping is golden and crisp.

  5. Serve: Allow to cool for 5 minutes. Serve warm with a spoonful of Greek yogurt and a light sprinkle of cinnamon.

Chef's Tip

Vegan option: Replace the Greek yogurt with thick unsweetened soy or coconut yogurt. The crumble itself is naturally vegan. This is a lighter take on a classic apple crumble, with oats, walnuts, almond flour and tahini creating a naturally nutty, satisfying topping. Warm cinnamon and ginger make it especially comforting, while Greek yogurt adds a cool, creamy contrast and extra protein.
