Beef Lettuce Wraps with Avocado Salsa

Method
Heat 1 tbsp extra virgin olive oil in a large frying pan over a medium heat.
Add the beef mince and cook for 5–7 minutes, breaking it up as it cooks. Season with salt and freshly ground black pepper.
Continue cooking until the beef is browned and fully cooked through. Drain any excess fat if necessary, and set aside.
While the beef is cooking, prepare the salsa. In a medium bowl, combine the diced avocado, tomato, and finely chopped red onion.
Drizzle with the lime juice and season with salt and freshly ground black pepper to taste. Toss gently to combine, ensuring the avocado stays chunky.
Lay out the lettuce leaves on a serving platter.
Spoon the cooked beef into the centre of each lettuce leaf. Top with a generous amount of the avocado salsa.
Fold the lettuce around the filling and serve immediately. You can garnish with fresh coriander or an extra squeeze of lime for added flavour.
