Carrot Ginger Soup

Method
Sauté the aromatics: Heat the olive oil in a pot over medium heat. Add the diced onion and grated ginger, cooking for about 2 minutes until fragrant and softened.
Cook the carrots: Add the sliced carrots to the pot and stir well to combine with the onion and ginger. Cook for an additional 3 minutes to enhance their natural sweetness.
Simmer the soup: Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer for 15 minutes, or until the carrots are tender.
Blend the soup: Remove from heat and use an immersion blender to puree the soup until silky smooth. For a chunkier texture, blend partially.
Season and serve: Add salt and pepper to taste, then ladle the soup into bowls. Garnish with a drizzle of olive oil or fresh herbs, and serve warm.
