Duck Breast with Cherry Balsamic Sauce

Method
Prepare the duck: Lightly score the skin of the duck breasts in a crisscross pattern. Season both sides with salt and pepper.
Sear the duck: Heat a skillet over medium heat and place the duck breasts skin-side down. Cook for 6-8 minutes, draining rendered fat as needed, until the skin is crispy. Flip and cook for 3-4 minutes for medium rare. Remove and let rest.
Make the sauce: In the same skillet, remove excess fat, leaving about 1 tablespoon. Add cherries, balsamic vinegar, stock, and honey. Simmer for 5 minutes until the sauce thickens.
Serve: Slice the duck breast and drizzle with the cherry balsamic sauce.

Serve with creamy polenta or roasted root vegetables.
