Method

  1. Blend: Add the cooked edamame, tahini, lemon juice, garlic, cumin, za'atar and olive oil to a food processor. Blend until smooth, scraping down the sides as needed.

  2. Adjust the texture: Add the cold water, one tablespoon at a time, and blend until the mixture becomes creamy but remains thick enough to scoop.

  3. Finish: Season with salt, black pepper and lemon zest. Transfer to a shallow serving bowl and create a small swirl in the centre with the back of a spoon.

  4. Garnish: Drizzle with a little extra virgin olive oil and sprinkle with pumpkin seeds, fresh parsley and za'atar. Serve with sliced vegetables, whole-grain crackers or toasted sourdough.

Chef's Tip

Vegan option: Naturally vegan — no substitutions needed. For an even higher-protein version, add 50 g extra edamame or 1 tbsp hemp seeds. A vibrant green alternative to traditional hummus, this creamy edamame dip delivers significantly more protein while keeping the fresh Mediterranean character of lemon, tahini and za'atar. Pumpkin seeds add a satisfying crunch and an extra layer of texture.
