Method

  1. Mash the avocado in a medium bowl until completely smooth and creamy.

  2. Add the egg, kefir, flour, baking powder, sweetener, vanilla extract, and cinnamon (if using). Whisk until a smooth, lump-free batter forms.

  3. Let the batter rest for 2–3 minutes to allow the baking powder to activate, creating lighter and fluffier pancakes.
