Method

  1. In a bowl, mix 2 tbsp extra virgin olive oil, 1 tbsp lemon juice, salt, and freshly ground black pepper.

  2. Add the chicken wings and toss to coat evenly. Let them marinate for at least 10 minutes to absorb the flavours.

  3. Preheat your grill over a medium heat. Grill the chicken wings for 6–8 minutes per side, turning occasionally, until golden brown and fully cooked with an internal temperature of 75°C.

  4. Preheat the oven to 200°C (180°C fan/Gas Mark 6). Toss the potato cubes with 2 tbsp extra virgin olive oil, then roast for 20 minutes until crispy and golden.

  5. In a frying pan, sauté the grated garlic and fresh coriander with a little extra virgin olive oil until fragrant. Add the roasted potatoes, the chilli flakes, and a pinch of salt, then toss to coat. Finish with a drizzle of 1 tbsp lemon juice for a zesty touch.

  6. Plate the wings with the spicy potatoes and serve immediately for a flavourful meal.
