Method

  1. Preheat your oven to 180°C (350°F). Lightly grease a small baking dish or line it with parchment paper.

  2. Add the rolled oats to a blender or food processor and blend until they resemble a fine oat flour.

  3. Add the banana, Magerquark (or Skyr), eggs, almond milk, vanilla protein powder, baking powder, sweetener, vanilla extract (if using), cinnamon, and a pinch of salt.

  4. Blend until the batter becomes completely smooth and creamy.

  5. Pour the batter into the prepared baking dish and smooth the surface with a spatula.

  6. Sprinkle the chocolate chips evenly over the top, if using. They will melt slightly during baking, creating delicious pockets of chocolate throughout the bake.

  7. Bake for 25 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.

  8. Allow the baked oatmeal to cool for about 5–10 minutes before slicing into two portions.

  9. Serve warm on its own or with a spoonful of Greek yogurt, fresh berries, sliced banana, or a drizzle of sugar-free maple syrup.

Chef's Tip

For an even richer banana flavor, use a banana with plenty of brown spots. You can also stir blueberries, raspberries, chopped walnuts, or pecans into the batter before baking for added texture and natural sweetness.
