High-Protein Blueberry Cottage Cheese Bake

Method
Preheat the oven to 350°F (180°C) and lightly grease a small baking dish or line it with parchment paper.
In a large bowl, whisk together the quark, egg, sweetener, spelt flour, almond flour, and pudding mix until smooth and creamy.
Gently fold the blueberries into the batter, taking care not to crush them.
Pour the mixture into the prepared baking dish and smooth the surface with a spatula.
Bake for 30 minutes, or until the top is lightly golden and the center is set.
Allow the casserole to cool for 10–15 minutes before serving so it firms up slightly.
Enjoy warm or chilled. Top with additional fresh blueberries or a spoonful of Skyr if desired.
This versatile bake works beautifully with almost any berry. Try raspberries, blackberries, strawberries, or mixed berries for different flavors throughout the year. If using frozen berries, add them directly from the freezer without thawing to prevent excess moisture from affecting the texture.
