Method

  1. In a medium bowl, whisk together the egg, almond milk, almond flour, cocoa powder, baking powder, and protein powder until smooth.

  2. Pour the batter into a microwave-safe dish and cook on high power for 3 minutes. Alternatively, bake at 350°F (180°C) for 20–25 minutes. Allow the sponge to cool completely.

  3. In a separate bowl, combine the high-protein coconut yogurt and shredded coconut until evenly mixed.

  4. Spread the coconut filling evenly over the cooled chocolate sponge.

  5. Melt the dark chocolate, stirring in the coconut oil if using for a smoother consistency.

  6. Pour the melted chocolate over the coconut layer and spread evenly with a spatula.

  7. Refrigerate for at least 1 hour, or until the chocolate has fully set. Slice into portions and serve chilled.
