High-Protein Cheesy Tortilla Bake

Method
Preheat your air fryer to 160°C (320°F). If using a conventional oven, preheat it to 180°C (350°F).
Place the high-protein tortilla into a small rectangular or round baking dish, gently pressing it against the bottom and sides to create a shallow crust.
In a large bowl, whisk the eggs until smooth. Add the fat-free cream cheese (or smooth cottage cheese), garlic, salt, black pepper, and Italian herbs. Mix until the filling is creamy and well combined.
Fold in the diced tomato and chopped green onions, stirring gently to distribute them evenly throughout the mixture.
Pour the filling into the prepared tortilla shell and spread it evenly.
Sprinkle the grated reduced-fat cheese generously over the top.
Cook in the air fryer for 20 minutes at 160°C (320°F), or bake in the oven for approximately 30 minutes at 180°C (350°F), until the filling is set and the cheese is melted with a beautiful golden crust.
Allow the bake to rest for 3–5 minutes before slicing. Garnish with fresh parsley or basil and serve warm.
For even more Mediterranean flavor, add chopped spinach, roasted red peppers, mushrooms, or a few olives to the filling before baking. Pair the bake with a crisp cucumber and tomato salad for a satisfying, protein-rich meal.
