Method

  1. Add the frozen cherries and water to a small saucepan. Bring to a gentle boil over medium heat, stirring occasionally.

  2. Remove the saucepan from the heat and transfer the cherry mixture to a blender or a deep bowl suitable for an immersion blender.

  3. Add the instant gelatin and blend until it has completely dissolved.

  4. Add the soft cottage cheese (or Greek yogurt) and sweetener. Because cherries are naturally tart, adjust the sweetness to your taste.

  5. Blend again until the mixture is completely smooth, creamy, and evenly colored.

  6. Pour the mixture into a serving dish or silicone mold, smoothing the surface with a spatula.

  7. Refrigerate for at least 6 hours, preferably overnight, until the soufflé is fully set. Slice or unmold before serving.

For the smoothest texture, strain the blended cherry mixture through a fine-mesh sieve before adding the cottage cheese if you prefer a seed-free dessert. Serve chilled with fresh cherries or a dollop of Greek yogurt for an elegant, high-protein finish.
