High-Protein Cottage Cheese & Ham Flatbreads

Method
Preheat the oven to 350°F (180°C) and line a large baking tray with parchment paper.
In a large mixing bowl, whisk together the Skyr and eggs until smooth and fully combined.
Fold in the shredded reduced-fat cheese and diced lean ham, mixing until evenly distributed.
Divide the mixture into 2 equal portions and spread each into a round flatbread about ½ inch (1–1.5 cm) thick on the prepared baking tray.
Smooth the tops with the back of a spoon to ensure even baking.
Bake for 20 minutes, or until the flatbreads are golden around the edges and firm in the center.
Allow them to cool for 5 minutes before slicing and serving. Enjoy warm with a fresh salad, Greek yogurt dip, or your favorite high-protein spread.
For even more flavor, add chopped chives, parsley, or a pinch of smoked paprika to the batter before baking. These flatbreads also make an excellent base for a quick breakfast sandwich or a light high-protein pizza topped with fresh vegetables.
