High-Protein Cottage Cheese Pancakes (Syrniki)

Method
If your cottage cheese has a coarse texture, blend it with an immersion blender or food processor until smooth and creamy. This creates tender, restaurant-style syrniki.
Add the egg yolk, rice flour, sweetener, and vanilla extract or lemon zest if using. Mix until a soft dough forms. The mixture should be slightly sticky but easy to handle.
Lightly dust your work surface and hands with rice flour. Divide the dough into 4 equal portions and gently roll each into a ball.
To achieve perfectly shaped syrniki, place a drinking glass over each ball and rotate it in small circular motions. This creates smooth, even sides. Lightly flatten the tops and bottoms with the base of the glass.
Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or a small amount of ghee.
Fry the syrniki for 3–4 minutes per side, until beautifully golden brown with a lightly crisp exterior and a soft, creamy center.
Transfer to a serving plate and allow them to cool for 1–2 minutes before serving.
For the fluffiest syrniki, chill the mixture for 15–20 minutes before shaping. Serve with Greek yogurt, fresh strawberries, blueberries, raspberries, or sugar-free berry jam for a delicious high-protein breakfast or healthy dessert.
