Method

  1. Pour the milk into a small saucepan and heat over medium heat until it is just about to simmer.

  2. Stir in the rice flakes, sweetener, and cinnamon or vanilla. Reduce the heat to low and cook for 3–5 minutes, stirring continuously until the cereal becomes thick and creamy. (Follow the package directions if they recommend a different cooking time.)

  3. Remove the saucepan from the heat and let the cereal stand for 2 minutes to thicken slightly.

  4. Gently stir in the Skyr until the mixture becomes smooth, creamy, and rich in protein. Do not return the cereal to the heat after adding the Skyr, as this helps preserve its silky texture.

  5. Divide the cereal between two serving bowls.

  6. Top with the fresh or thawed berries and finish with any optional toppings you like.

  7. Serve immediately while warm.

Chef's Tip

For the best flavor, combine several types of berries to create a balance of sweetness and tartness. If using frozen berries, thaw them first and drain any excess liquid to keep the cereal thick and creamy. A sprinkle of toasted almonds or pistachios adds a delicious crunch and makes this breakfast even more satisfying.
