High-Protein Creamy Spinach & Ham Pasta

Method
Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Reserve about 60ml (¼ cup) of the pasta cooking water before draining.
While the pasta cooks, place the frozen spinach in a large nonstick skillet over medium heat and cook until completely thawed. If using fresh spinach, sauté it until wilted.
Add the light cooking cream to the skillet and stir until combined. Simmer for 2–3 minutes until the sauce begins to thicken slightly.
Stir in the diced lean ham along with the garlic powder, salt, and black pepper. Cook for another 2 minutes until the ham is heated through.
Add the reduced-fat shredded cheese and stir continuously until it melts into a smooth, creamy sauce. If needed, add a splash of the reserved pasta water to loosen the sauce.
Add the cooked pasta to the skillet and toss everything together until each piece is evenly coated with the creamy spinach sauce.
Divide into four equal portions and serve immediately, garnished with freshly cracked black pepper or a sprinkle of fresh parsley if desired.
For an even higher protein meal, substitute regular pasta with a high-protein or legume-based variety. Be sure not to overcook the spinach, as it will retain a brighter color and fresher flavor. This dish stores well in the refrigerator for up to 4 days, making it an excellent choice for meal prep.
