High-Protein Flourless Skyr Rolls

Method
Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
In a large mixing bowl, combine the Skyr, eggs, light cream cheese, psyllium husk, baking powder, shredded cheese, and salt.
Stir until a thick, sticky dough forms. Let the mixture rest for 2–3 minutes so the psyllium can absorb moisture.
Lightly wet your hands and divide the dough into 7 equal portions, shaping each into a smooth roll.
Place the rolls on the prepared baking tray, leaving a little space between them.
Sprinkle the tops with sesame seeds. If your oven has a convection setting, use it for the first 15 minutes to help the rolls develop a beautifully golden crust.
Continue baking for a total of 25–30 minutes, or until the rolls are puffed, golden, and firm. Cool on a wire rack for 5–10 minutes before serving.
Psyllium husk gives these rolls their bread-like texture while keeping them completely flourless. For the best results, weigh the psyllium rather than measuring by volume, as different brands vary in density. These rolls freeze well and can be reheated in the oven or toaster for a freshly baked taste.
