High-Protein French Soufflé Cheesecake

Method
Preheat the oven to 350°F (180°C) and lightly grease a medium baking dish or line it with parchment paper.
In a large bowl, whisk together the Skyr, eggs, egg whites, pudding mix, baking powder, and sweetener until smooth and creamy.
Pour the batter into the prepared baking dish and gently tap the dish on the countertop to remove any air bubbles.
Bake for 50 minutes, or until the top is lightly golden and the center is just set.
Turn off the oven and leave the casserole inside with the door slightly open for 10 minutes to help prevent cracking.
Remove from the oven and allow it to cool completely before slicing.
Serve chilled or at room temperature with a spoonful of high-protein vanilla pudding and a light dusting of powdered sweetener, if desired.
For an even lighter, soufflé-like texture, separate the eggs and beat the egg whites until soft peaks form before gently folding them into the batter. This creates an exceptionally airy dessert while keeping it rich in protein and naturally light.
