Method

  1. Preheat the oven to 180°C (350°F) and lightly grease a medium baking dish.

  2. Peel the potatoes and slice them into very thin, even rounds, about 3 mm (⅛ inch) thick. Thin slices ensure the potatoes cook evenly and become tender.

  3. In a large mixing bowl, combine the sliced potatoes, cottage cheese, light cream, garlic powder, Italian herbs, salt, and black pepper. Gently mix until the potatoes are evenly coated with the creamy mixture.

  4. Transfer everything to the prepared baking dish and spread it into an even layer. Cover loosely with foil and bake for 35–40 minutes, or until the potatoes are almost tender.

  5. Remove the dish from the oven, uncover it, and sprinkle the shredded reduced-fat cheese and sliced green onions evenly over the top.

  6. Return the casserole to the oven and bake for an additional 20 minutes, or until the cheese is melted, golden brown, and the potatoes are completely tender.

  7. Let the casserole rest for 5–10 minutes before cutting it into two generous portions. Serve warm as a satisfying high-protein main course.
