High-Protein Savory Cottage Cheese Skillet Bake

Method
In a large bowl, combine the quark (or firm cottage cheese), eggs, spelt flour, grated reduced-fat cheese, chopped green onions, garlic, salt, and black pepper.
Mix thoroughly until the ingredients are evenly incorporated into a thick, smooth batter.
Heat a large non-stick skillet over medium heat and lightly coat it with cooking spray.
Pour the mixture into the skillet and spread it into an even layer using the back of a spoon.
Cover the skillet with a lid and cook for 5–6 minutes, or until the bottom is golden brown and the top is almost completely set.
Carefully loosen the edges with a spatula and flip the bake using a large plate or lid if necessary.
Cook the second side for 2–3 minutes, uncovered, until lightly golden and fully cooked through.
Let the bake rest for 2 minutes before slicing into wedges. Garnish with fresh herbs and serve warm.
This savory skillet bake is delicious on its own or topped with smoked salmon, sliced avocado, or a spoonful of Greek yogurt. It also makes an excellent protein-rich lunch and tastes just as good served warm or at room temperature.
