High-Protein Spinach & Cheese Casserole

Method
Preheat the oven to 180°C (350°F) and lightly grease a medium baking dish.
Thaw the spinach completely, then squeeze out as much liquid as possible using a clean kitchen towel or cheesecloth. Removing the excess moisture is essential for a firm, creamy casserole.
In a large mixing bowl, combine the drained spinach, cottage cheese, eggs, garlic powder, onion powder, salt, and black pepper. Stir until all the ingredients are evenly incorporated.
Fold in half of the shredded cheese, reserving the remaining cheese for the topping.
Transfer the mixture to the prepared baking dish and spread it into an even layer with a spatula.
Sprinkle the remaining shredded cheese evenly over the top.
Bake for 35–40 minutes, or until the casserole is fully set and the cheese is melted and golden brown. Allow it to rest for 5 minutes before slicing into four portions and serving warm.
