Method

  1. Brew the espresso or strong coffee and allow it to cool completely.

  2. Beat the egg white with an electric mixer until stiff peaks form.

  3. In a separate bowl, combine the coconut cottage cheese (or Skyr), high-protein vanilla pudding, and bourbon vanilla flavoring until smooth.

  4. Gently fold the whipped egg white into the pudding mixture, preserving as much air as possible for a light, mousse-like texture.

  5. Quickly dip 4 ladyfinger cookies into the cooled coffee and arrange them in the bottom of a serving dish.

  6. Spread half of the cream mixture over the cookies. Repeat with the remaining coffee-soaked ladyfingers and finish with the remaining cream.

  7. Dust the top evenly with cocoa powder using a fine-mesh sieve. Refrigerate for at least 4 hours, preferably overnight, before serving.

Chef's Tip

Dip the ladyfingers in coffee for only 1–2 seconds per side to prevent them from becoming soggy. Allowing the tiramisu to chill overnight produces the best flavor and texture as the layers fully meld together.
