Method

  1. Grate the zucchini using the coarse side of a box grater. Sprinkle lightly with salt and let it sit for 5 minutes. Squeeze out as much excess moisture as possible using a clean kitchen towel or paper towels. This step helps create crispy fritters.

  2. In a large bowl, combine the cottage cheese, egg, spelt flour, garlic (if using), salt, and black pepper. Stir until smooth.

  3. Fold the grated zucchini into the batter and mix until evenly combined. If the mixture seems too wet, add an extra teaspoon of flour.

  4. Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or a small amount of ghee.

  5. Scoop about 2 tablespoons of batter per fritter into the skillet and gently flatten with the back of a spoon.

  6. Cook for 3–4 minutes per side, or until the fritters are beautifully golden brown and cooked through.

  7. Transfer to a paper towel-lined plate for a minute before serving.

  8. Serve warm with Greek yogurt, Skyr, or a light garlic yogurt sauce, and garnish with fresh herbs.
