Italian Turkey Meatballs with Tomato & Basil

Method
Place the turkey mince, breadcrumbs, egg, Parmesan, grated garlic, parsley, oregano, salt and black pepper in a bowl. Mix gently until just combined.
Shape the mixture into 10–12 evenly sized meatballs.
Heat half of the olive oil in a large non-stick skillet over medium heat. Add the meatballs and cook for 6–8 minutes, turning occasionally, until lightly browned. Transfer to a plate.
Add the remaining olive oil to the skillet, then add the onion and cook for 4–5 minutes until softened.
Add the chopped garlic and cook for 30 seconds.
Stir in the chopped tomatoes and bring the sauce to a gentle simmer.
Return the meatballs to the skillet, cover partially and cook for 10–12 minutes until the turkey is cooked through.
Finish with fresh basil and serve warm.
Mix the turkey mixture only until the ingredients are combined. Overmixing can make turkey meatballs dense and firm. For evenly sized meatballs, lightly dampen your hands before shaping them.
