Pan-Seared Scallops with Lemon Butter Sauce

Method
Prepare the scallops: Remove the side muscle from each scallop, if attached. Season lightly with salt and pepper.
Sear the scallops: Heat olive oil in a skillet over medium-high heat. Place scallops in the skillet, ensuring they are not touching. Sear for 2-3 minutes per side until golden brown and caramelized. Remove from the skillet and set aside.
Make the sauce: Reduce the heat to medium and melt the butter in the same skillet. Add the garlic and cook for 30 seconds. Stir in the lemon juice and cook for 1 minute until slightly thickened.
Combine: Return the scallops to the skillet and spoon the sauce over them to coat.
Serve: Plate the scallops and drizzle with any remaining sauce.
Pair with creamy mashed potatoes and steamed asparagus.
