Special High-Protein Oatmeal with Caramelized Banana & Peanut Butter

Method
In a small saucepan, combine the rolled oats, almond milk, and water. Bring to a gentle simmer over medium heat.
Cook the oats for 8–10 minutes, stirring occasionally, until they become thick, creamy, and tender. Add a splash of extra water or almond milk if a thinner consistency is preferred.
While the oatmeal cooks, heat a non-stick skillet over medium heat and lightly coat it with cooking spray or a small amount of coconut oil.
Add the banana slices in a single layer and cook for 1–2 minutes per side, until they are lightly caramelized, golden, and soft.
Remove the oatmeal from the heat and allow it to cool for about 1 minute. Stir in the sweetener, whey protein powder, and peanut butter until completely smooth and creamy.
Transfer the oatmeal to a serving bowl and top with the warm caramelized banana slices.
If desired, sprinkle with chopped dark chocolate and let it melt slightly over the warm oatmeal. Finish with a dusting of cinnamon or chopped roasted peanuts for extra texture.
For an even richer flavor, use a very ripe banana, which caramelizes beautifully without needing much oil. Adding the whey protein after removing the oatmeal from the heat helps keep the texture silky smooth and prevents the protein from becoming grainy. This comforting breakfast is perfect before a workout or whenever you need a satisfying, high-protein start to the day.
