Spicy Cajun Salmon

Method
Prepare the salmon: Pat the salmon fillets dry with a paper towel. Rub each fillet with Cajun seasoning and lemon zest, ensuring the spices are evenly distributed.
Heat the skillet: Heat the olive oil in a large skillet over medium-high heat. Swirl the oil to coat the bottom of the pan.
Cook the salmon: Place the salmon fillets skin-side down in the skillet. Cook undisturbed for 4-5 minutes until the skin is crispy. Flip the fillets and cook for another 3-4 minutes, or until the salmon is cooked to your preferred doneness.
Add butter: Reduce the heat to low and add the butter to the skillet. Tilt the skillet slightly to pool the butter and use a spoon to baste the salmon fillets for extra flavor.
Serve: Transfer the salmon to serving plates and spoon any remaining butter over the top. Serve immediately.
Serve with roasted vegetables or creamy mashed potatoes.
