Method
Prepare the Vegetables: Peel and dice the sweet potatoes into 1–2 cm cubes. Dice the bell pepper and onion into similar-sized pieces.
Cook the Sweet Potatoes: Heat the olive oil in a large non-stick frying pan over a medium heat. Add the sweet potatoes and cook for about 5 minutes, stirring occasionally, until they begin to soften and lightly brown.
Add the Remaining Vegetables: Stir in the diced bell pepper and onion. Continue cooking for 10–15 minutes, stirring occasionally, until all the vegetables are tender and golden.
Add the Eggs: Make four small wells in the vegetable mixture and crack an egg into each one. Reduce the heat to low and cover the pan with a lid.
Cook the Eggs: Cook for 4–5 minutes for soft yolks, or 6–7 minutes if you prefer the yolks fully set.
Season and Serve: Season with salt and freshly ground black pepper. Serve immediately, with fresh herbs or sliced avocado if desired.
